Best Ever Chocolate Chip Banana Loaf

If you are a chocolate lover, you will like this little extra surprise addition of chocolate chips in this delicious banana loaf.  You will want to try it out for yourself and you just might have your family begging for more!

Makes: 1 large loaf

Ingredients:

1/2 c softened butter

1 c organic cane sugar or xylitol

2 free run eggs

1 tsp aluminum free baking soda

1 tblsp boiling water

1 c mashed ripe bananas

2 c all purpose flour

1/4 tsp Pink Himalayan Salt

2 tsp aluminum free baking powder

1 cup chocolate baking chips

Method:

1. Grease one large loaf pan and preheat oven to 350 degrees Farenheit.

2. Cream butter and then add sugar, then eggs.

3. Dissolve baking soda in boiling water.

4. Add baking soda mixture to the mashed bananas.

5. Sift flour, and mix it together with the salt and baking powder. Add to the mixing bowl and mix together until blended.

6. Bake in moderate oven at 350 degrees Farenheit for 60-65 minutes or until a toothpick inserted into the loaf comes out clean.

7. Allow to cool on a cooling rack before slicing it.

Note: To make this recipe dairy free you can use cacao nibs in place of the chocolate chips and also use odorlus coconut oil in place of the butter.  It will change the taste a bit as the nibs will give more of a crunchy texture than the smooth melt in your mouth texture of chocolate chips, but the coconut oil has no coconut smell and it doesn't change the texture of the bread at all. I use coconut oil a lot in my baking instead of butter when I'm making dairy free recipes.
