Chili
1 lb ground beef
1 chopped onion
1/2 c chopped celery
2 cans kidney beans
1 can pork and beans
1 large can of chopped tomatoes
Directions:
1. In a large pot, place ground beef, onions and celery and cook together until the beef is browned.
2. Add beans, tomatoes, and spices. Continue cooking on medium heat stirring constantly.
3. Lower heat and simmer for about an hour to blend spices nicely. Stir occassionally.
4. Serve with your favorite homemade buns or biscuits.
Note: I made this while travelling in my rv using canned food as it is easier but I usually use fresh organic tomatoes and 2-3 garlic cloves, etc. at home. I also prefer to use organic dried beans that I soak overnight when at home.
Use what you have on hand as it turns out great whatever you choose. Use organic when possible.
Serves: 6-8 adults (If you prefer it hotter, add a bit of your favorite hot sauce or a few habenaros or hot chili peppers)
