Chocolate Chip Logs
These cookies have been a Christmas tradition at our house since my kids were little. You can enjoy them year round though! They do take a bit longer to prepare but they are so worth it the extra effort!
Yield: 4 1/2 dozen cookies
Ingredients:
3/4 c butter (softened)
1 egg
3/4 c sugar
1 1/2 tsp vanilla extract
6 oz semi sweet chocolate chips
1/2 tsp pink himalayan salt
1 1/2 tsp vanilla extract
2 1/4 c all purpose flour
2 c walnuts (chopped)
Coating: 12 oz chocolate chips and 1 tblsp Nutiva coconut oil
Instructions:
1. Preheat oven to 350 degrees Farenheit.
2. Beat butter, sugar, egg, and vanilla extract together. Blend in the flour and stir in the chocolate chips.
3. Form a large ball. Pinch off dough and form into 2" x 1/2" logs. Place on cookie sheets and place in oven for 12-15 minutes or until bottoms are nicely browned. Tops will still be quite white looking.
4. Let cool on wire racks.
5. Coating: Melt 12 ounces of chocolate chips with 1 tblsp of coconut oil and dip each end of the logs in the chocolate and then sprinkle chopped walnuts over top or dip into the walnuts and place back on cookie sheets or onto waxed paper on your counter, until cool and hardened.
----Recipe was shared with me over 35 years ago and it has become a Christmas favorite at our house. My children have carried on the tradition of making these every year at Christmastime.
