Whipped Shortbread


1 lb salted butter1 1/4 c organic icing sugar1/2 c organic cornstarch2 1/2 c all purpose flour (organic if possible)7 marishino cherries cut up for decorating the top of the cookies. (I used the ones in the jar) I cut them up then placed a paper towel over top to absorb the liquid.1. Preheat  oven to 350 degrees Farenheit.2. In a large mixing bowl,  chop butter into smaller pieces and whip for 2 minutes until creamy. (I used my butter at room temperature).3. Slowly add the icing sugar.4. Add cornstarch.  Mix well.5. Slowly add flour to make a soft dough.6. Pinch off enough dough to make 1" balls.7. Place balls of dough on to cookie sheet.  Press balls with a fork. Place a piece of cherry into center of each cookie.8. Bake at 350 degrees Farenheit for about 12 minutes.9. Remove from rack and let cool.  Enjoy!Makes: 4 doz cookies👩‍🍳Note: These freeze well.
