ZUCHINNI CHOCOLATE CAKE
Yield: 1 large 9"x13" cake
1 3/4 c sugar
1/2 c butter
1/2 c Mira avacado oil (or you can use whatever healthy cooking oil you have)
2 free range eggs
1/2 c sour cream
1 tsp baking powder
1 tsp baking soda
1/2 tsp pink himalayan salt
4 tblsp cocoa
2 c grated zuchinni
1/2 c chocolate chips
2 1/2 c all purpose flour
Directions:
1. Mix butter and sugar together.
2. Add eggs, oil and sour cream. Beat together until mixed. Add zuchinni.
3. Combine dry ingredients together and then add them to the mixture.
4. Pour batter into well greased 9"x13" pan. Sprinkle 1/2 c of chocolate chips over the top of the batter evenly.
5. Bake at 325 degrees Farenheit for 45 minutes.
6. Enjoy warm with icecream or whipped cream.
